Recipe for Thai Peanut Sauce

Ingredients:

1 x 400 can coconut cream

85g masaman Curry Paste

4 tablespoons smooth peanut butter

½ cup coconut milk

5 tablespoons of grated palm sugar

1 tablespoon tamarind paste
Method:

In a saucepan, on high heat, add coconut cream and bring to a boil

Reduce heat to low, then stir in massaman curry paste.

Add peanut butter, stir again

Add ½ cup of coconut milk. Stir on low heat until peanut butter has dissolved

Add grated palm sugar and stir to combine

Add tamarind paste, stir until dissolved
- Have a taste and if it's too spicy for your liking, then sweeten slightly with white sugar
