This Thai peanut sauce recipe uses all plant-based ingredients and is perfect for those following a vegan diet. Serve as a dipping sauce with rice crackers, fresh spring rolls or use a stir through for stir-fries🥬

Cooking time: 10 minutes
  
Ingredients:
  • 1 x 400 can coconut cream
  • 85g masaman Curry Paste
  • 4 tablespoons smooth peanut butter
  • ½ cup coconut milk
  • 5 tablespoons of grated palm sugar
  • 1 tablespoon tamarind paste
  
Method:
  • In a saucepan, on high heat, add coconut cream and bring to a boil
  • Reduce heat to low, then stir in massaman curry paste.
  • Add peanut butter, stir again
  • Add ½ cup of coconut milk. Stir on low heat until peanut butter has dissolved
  • Add grated palm sugar and stir to combine
  • Add tamarind paste, stir until dissolved
  • Have a taste and if it's too spicy for your liking, then sweeten slightly with white sugar
  • Take off heat and serve
